When you want to stock up your freezer with beef, you have the option of buying a whole, half, or quarter of a steer. A whole is 100% of the steer. A half is 50% of a steer and a quarter is 25% of a steer.
Before you process your beef, you'd probably like to know how much meat you'll receive. To make it easier to understand, we are going to use a whole steer for an example.
A steer can weigh approximately 1,200 lbs. Once the steer is processed, there'll be about 744 lbs of carcass (62% live weight). After the processor removes the fat, bone, and any other waste, there will be a remaining 498 lbs of meat (41% live weight). Each steer will vary on weight thus varying on how many lbs of meat you receive.
Our steer will be sold to you at market price per lb of live weight. The cost of processing is a separate fee paid separately to the processor.
